I can't remember whether this has been asked/answered (and I'm much to lazy to look), is there a way to see the current stats of any prospects yet to be activated?

It requires a bit of effort but the files are in dropbox for the drafts of each season. Then just remember that each player gets their yearly age rerate so add 3 to the relevant stats for each year passed.

For example a player with a 55 scoring rating in the year 2 draft will now have a 64 scoring rating. 3 years x 3 = +9 increase.
