Tell her your back off to Ireland, with work, and that if she wants she can have a take-away...but, she's got to pay for it

Tell her that you have got to go to New Jersey and you'll see her on Friday. She will kill you later.

Then tell her that you've been invited to speak at a conference and will miss your wedding anniversary. (And not for the first time, I should add).

Then, just as you're going out of the door, mention you've also been invited to speak at another conference which will mean missing her birthday.

That is very true, but when you consider that the conference taking place on our wedding anniversary is in Colombia, and the one on my birthday is in Las Vegas, then he bloody well deserves to spend three days in New Jersey

That's the one. I've told him to be careful and that he should pack his kevlar vest and AK-47. Though to be honest, I reckon New Jersey is probably more dangerous.
